Some of the most common ways to prepare chicken are:

  • Jerk
  • Curried
  • French Fried
  • Baked
  • Brown Stew 
  • Fricassee
  • Sweet and Sour

So, you have read those styles mentioned above and you are probably now wondering what Jamaican Fricassee chicken is. Firstly, it is not brown stew chicken, just in case you share that common misconception. It is a dish that is primarily fried chicken cooked in a sweet and spicy sauce.

What Is The Difference Between Chicken Stew and Chicken Fricassee?

There are quite a few differences between Jamaican Brown Stew and Fricassee chicken. Brown Stew Chicken is darker in appearance as a key ingredient in that dish is browning or caramelized sugar.

Brown Stew Chicken is also usually cut into small bite-size pieces. On the other hand, fricassee chicken gets its colour from frying until golden brown and then added into a tomato-based sauce and is generally cut into larger whole pieces like legs, thighs, wings, breasts and ribs.

What Does Fricassee Mean In Cooking?

Fricassee is a style of cooking where meats, fish and vegetables are cooked in a sauce or broth. In Jamaica, Fricassee is also called Homestyle.

What Is Jamaican Chicken Fricassee Made Of?

Jamaican style Fricassee Chicken is all about the sauce that is made of fresh herbs and spices that comes together to make a thick gravy.

It is one of the most common ways of preparing chicken in most Jamaican households and you will definitely find it on the menu of most local restaurants.

Preparing this dish has a two-step process, but isn't extremely time-consuming as you can prepare the entire dish from scratch in an hour. Like with most Jamaican dishes you can always tweak the recipe to suit your needs. Some of the variations for preparing Fricassee chicken:

  1. Frying the chicken all the way through before adding it to the sauce
  2. Only partially frying the chicken but ensuring the outside is golden brown 
  3. Some persons coat their chicken in flour before frying
  4. Some persons add sugar to their sauce

Jamaican Fricassee Chicken Recipe

INGREDIENTS

  • Chicken Parts - (breasts, ribs, legs, wings and thighs)
  • Garlic - chopped finely
  • Onion - sliced into thin rings
  • Scallion and thyme 
  • Ginger - chopped finely
  • Pimento - crushed
  • Flour
  • Tomatoes - diced
  • Irish potatoes - cut into thin slices
  • Carrot - cut into thin slices
  • Sweet peppers - cut into strips
  • Scotch bonnet pepper - cut into pieces and seeds removed
  • Vinegar
  • Ketchup
  • Oil

PROCEDURE

  1. The first step is to prepare your chicken. Remove any skin and fat from the chicken, then wash with lime, vinegar and water. Season your chicken with your favourite chicken and all-purpose seasonings and set aside. There is no need to add other seasonings at this point, as the chicken will get the majority of its flavour from the sauce which will be well seasoned.

  2. If you would like to add flour to your chicken before frying, simply season the flour with the same seasonings used to season your chicken then lightly roll in the flour. Once that is done you can proceed to the next step.

  3. Grab your Dutch pot or a deep skillet, and add enough oil to partially submerge the chicken. Add a spring of onion, garlic, pimento and scotch bonnet pepper to the oil, this will help to add flavour to the chicken. Make sure your oil is hot enough before adding the chicken to the pot. It is best not to overcrowd the pot, so depending on the number of pieces you are frying, you may have to do it in batches. Fry the chicken on both sides for around 10 to 15 minutes. 

  4. Once all your chicken has been fried, remove it from the oil and set it aside. Pour the majority of the oil from the pot leaving just enough to cover the surface. Add all your herbs, vegetables and seasonings to the pot at this time, stir, cover and leave to sweat on medium heat for around 5 minutes. 

  5. Add a cup of water, then ketchup to the pot, cover and bring to a boil. Add your already fried chicken pieces and use a spoon to pour some of the sauce over the chicken. Cover and allow to finish cooking for another 15 to 20 minutes or until the sauce has been reduced to a thick gravy. 

You have the option of adding sugar to your sauce for a sweeter flavour.

What Do You Serve With Jamaican Fricassee Chicken?

Jamaican style fricassee chicken can be had with any side dish including boiled banana and yam, white rice, roasted breadfruit and boiled dumplings. It is most commonly had on Sundays with rice and peas and vegetables.
