Our food is so unique and well loved around the world and it makes me proud to be a Jamaican. Some of our standout dishes involve curry, for example, Curry Chicken and Curry Goat. Another that is well-loved is the Jamaican-style Curry Lobster.

I know curry is had in many countries around the world, the same goes for Lobster but unless you have had Curry Lobster here, you have not tried it the way we do it and you are missing out.

Our cuisine is renowned for its bold and spicy flavours, as well as our love of using fresh, natural herbs and spices. Jamaican curry powder and our technique for preparing curry is a major aspect of our tradition, distinguished by its bright yellow colour and robust flavour profile. Unlike Indian curry powder, Jamaican curry powder typically includes a mix of turmeric, coriander, cumin, fenugreek, and allspice, among other spices. It’s open season for fresh Lobster almost all year long in Jamaica, outside of the few months of March to June. So you can count on seafood restaurants to serve up fresh tasty Lobster dishes.

But you don’t have to count on restaurants to try Curry Lobster. It’s a simple dish you can make right at home. Here’s the recipe:

Jamaican Curry Lobster Recipe

INGREDIENTS

  • 2 lb fresh lobster meat
  • Salt and pepper to taste
  • 3 tablespoons Jamaican curry powder
  • 2 tablespoons butter
  • 1 large tomato, chopped
  • 1/3 cup water
  • 1 onion, chopped
  • 2-3 blades escallion (also known as green onions or scallions)
  • 1/2 teaspoon cornflour (cornstarch)
  • 2 Scotch Bonnet peppers to taste (optional)

PROCEDURE

  1.  Prepare the Lobster:
  2.    - Pour hot boiling water over the lobster meat to help clean and soften it.

       - Wash the lobster meat thoroughly with a mixture of vinegar and water. This helps to remove any lingering impurities and enhances the flavour.

    2. Sauté the Seasonings:

       - In a large skillet or saucepan, melt the butter over medium heat.

       - Add the chopped onion and escallion to the skillet and sauté until they become soft and fragrant.

    3. Add the Curry Powder:

       - Stir in the Jamaican curry powder, ensuring that the seasonings are well-coated with the spice mixture. This step is crucial for releasing the full aroma and flavour of the curry powder.

    4. Cook the Lobster:

       - Add the cleaned lobster meat to the skillet, stirring to combine it with the curried seasonings.

       - Cook the lobster for about 8 minutes, allowing it to absorb the flavours.

    5. Create the Gravy:

       - Add the chopped tomato and 1/3 cup of water to the skillet.

       - Season with salt and pepper to taste.

       - Sprinkle the cornflour into the mixture to thicken the gravy, stirring constantly to avoid lumps.

    6. Add Heat with Scotch Bonnet Peppers:

       - If you enjoy spicy food, add the Scotch Bonnet peppers to the skillet. Be careful not to burst them, as they are extremely hot and can overpower the dish. Simply let them infuse the curry with their heat.

    7. Final Simmer:

       - Allow the mixture to simmer for another 8 minutes, ensuring that the lobster is fully cooked and the flavours are well-blended.

Serve with a steaming plate of plain white rice to soak up all the curry gravy.

Tips for the Perfect Jamaican Curry Lobster

  • Fresh Lobster: Always use the freshest lobster meat available for the best flavour and texture.
  • Balancing Heat: Adjust the amount of Scotch Bonnet peppers to your heat preference. Remember, these peppers are potent, so a little goes a long way.
  • Resting Time: Allowing the curry to rest for a few minutes before serving can help the flavours to meld together more effectively.
