What is better than Ice cream and a slice of cake? A sweet explosion of both! This dessert was a childhood favourite of mine, and if I am being truly honest, it still is. When you think of an ice cream cake you might be thinking of your favourite cake separated by a layer of delicious ice cream with loads of icing and the whole nine yards of decoration.

But as delicious as that is, it isn’t quite what I had in mind. The ice cream cake, or ice cream roll (for the sake of explanation) is a thin spongy cake rolled with ice cream, then sliced, similarly to a Swiss Roll. Ice cream cakes are most popular in the flavours, Neapolitan, vanilla, grapenut and cookie and cream, but for your homemade version, it can be whatever you want.

Here is the recipe for this dessert favourite. For the purpose of the recipe, we’ll use a spiced vanilla cake, just to make it as similar to the original treat as possible, but remember you can use whatever you want.

Jamaican Ice Cream Cake Recipe

INGREDIENTS

  • ⅓ cup melted unsalted butter
  • 4 eggs
  • 1 ½ tablespoons rum
  • 1 tablespoon vanilla extract
  • 2 tablespoons molasses
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon cinnamon powder
  • ⅛ teaspoon ground allspice
  • 2 tablespoons cocoa powder
  • 1.5 quarts of your favourite ice cream

PROCEDURE

  1. Preheat the oven to 350°F (180°C).

  2. Line and grease a baking sheet.

  3. Start working on your cake batter. In a large bowl, whisk the eggs until pale and foamy (or for around 2 minutes)

  4. Next, add the sugar, oil, and vanilla and continue to whisk the batter until all the ingredients are fully incorporated.

  5. Now it is time to introduce the dry ingredients. Add the flour, some cocoa powder, baking powder and salt.

  6. Use the spatula to properly mix the ingredients into the batter.

  7. Add just like that, your spiced vanilla cake is ready for the oven.

  8. Pour the batter onto the baking sheet and bake for 12 minutes.

  9. While your cake bakes, lay out a clean kitchen towel and sprinkle it with cocoa powder.

  10. Once the cake is done, place it face down onto the towel and remove the liner.

  11. Roll the cake in the towel and wrap it at the ends.

  12. Place in the refrigerator for 1 hour to cool.

  13. Take the cake from the fridge and unroll it.

  14. Place your ice cream in scoops onto your cake, then use your spatula to evenly flatten the scoops on the cake.

  15. Tightly roll the cake back up without the towel, and scrape the excess ice cream from the sides.

  16. Freeze the cake for at least 3 hours, preferably overnight.

  17. Slice the roll into 2-3 inch slices and serve.

To store the cakes, wrap individual slices in parchment paper and place them in ziplock sandwich bags and keep them frozen.
