In a thatched bar where it first began to operate, Holland Bamboo Restaurant began serving lunch to Holland Farm employees in 1997.
The building expanded as demand increased until it reached its current location. The restaurant specialises in Manish Water, Curried Goat & Roti, Curried Chicken, and Fry Chicken (goat soup). Possibly Jamaica's best curry goat.
Eleanore Blake founded the restaurant, which now employs five people.

Eat what you grow, grow what you eat is the restaurant's motto at Jake's Country Kitchen. For the meals they serve for breakfast, lunch, and dinner as well as for the fruit juices, teas, and coffee they provide throughout the day, they select the best produce and ingredients from nearby farms.
Vegetarian food is constantly available and fresh. Here, you can have freshly grilled seafood, gazpacho and pumpkin-ginger soup cooked with locally grown vegetables, as well as traditional Jamaican dishes like conch fritters and coconut curried chicken served with steamed callaloo and plantains.
Fish, crab, and lobster meals are abundant and caught in a way that upholds environmental regulations. They prepare all their desserts, such as ice cream and other treats from scratch. The restaurant is located on the property of the Jakes hotel but is also open to non-guests.
