Asham, also known as parched corn, is a traditional Jamaican snack that holds a special place in the hearts of many. This simple yet flavorful treat is made from ground roasted corn and sometimes peanuts, creating a delicious, nutritious, and long-lasting snack. Its preparation is deeply rooted in Jamaican culture, often enjoyed by both children and adults.

Despite Asham dwindling in popularity as a snack it is still being made in the rural community of Maggoty, St. Elizabeth by Aunty Cena who Wellesley had the great opportunity to chat with. Aunty Cena took us through the entire process of making parched corn Asham. Here is the recipe she uses.

Jamaican Asham Recipe

INGREDIENTS

  • 2 cups dried corn kernels
  • 1 cup raw peanuts (optional)
  • 1/4 cup granulated sugar (adjust to taste)

EQUIPMENT

  • Dutch pot or heavy-bottomed skillet
  • Mortar and pestle (or a mill for grinding)
  • Strainer or fine sieve

PROCEDURE

Step 1 - Prepare the Corn:

- Shell the corn kernels and remove any damaged ones.
- Wash the corn thoroughly, then sun dry until completely dried.

Step 2 - Roast the Corn:

- Heat a Dutch pot or heavy-bottomed skillet over medium heat.
- Add the dried corn kernels to the pot and stir continuously.
- Roast the corn for about 20 minutes, or until the kernels turn brown. Be careful not to burn them.

Roast the Peanuts (if using):

- In the same pot, after removing the corn, roast the raw peanuts until they are golden brown. This step is optional but adds a delightful nutty flavour to the mix.

Step 4 - Grind the Corn (and Peanuts):

- If you have a mill, grind the roasted corn and peanuts into a powder.
- Traditionally, a mortar and pestle are used. Add the roasted corn (and peanuts if using) to the mortar and beat it until it is finely ground to a powder. This process requires significant time and effort.

Step 5 - Add Sugar:

- Gradually add granulated sugar to the mortar while grinding the corn. Adjust the amount of sugar to taste.

Step 6 - Sieve the Powder:

- Use a strainer or fine sieve to sift the ground corn and remove the larger pieces.
- The resulting powder should be smooth and consistent.

Step 7 - Store or Serve:

- Package the asham in airtight containers for long-term storage.
- Asham can be enjoyed as is, providing a crunchy and sweet snack.

Tips for Best Results:

  • Roasting: Ensure even roasting by stirring continuously to prevent burning and achieve a uniform brown colour.
  • Grinding: Be patient while grinding. A finer powder results in a smoother, more enjoyable snack.
  • Storage: Store asham in a cool, dry place in airtight containers to maintain its freshness and extend its shelf life.

Serving Suggestions:

  • Traditional: Enjoy asham straight from the container for a quick and satisfying snack.
  • With Milk: Mix asham with warm milk to create a porridge-like consistency, perfect for breakfast.
  • Topping: Sprinkle asham over yoghurt or ice cream for a crunchy topping.

Cultural Significance of Asham

Asham is more than just a snack; it is a part of Jamaican heritage. Often enjoyed during traditional celebrations, fairs, and daily life, asham connects generations through its simple preparation and delightful taste. It is a testament to the resourcefulness of Jamaican culinary traditions, utilising locally available ingredients to create something truly special.

Health Benefits of Corn

Corn is a nutritious grain that offers several health benefits, making asham a healthy snack option:

  1. Rich in Fiber: Corn is high in dietary fibre, which aids in digestion and helps prevent constipation.
  2. Antioxidant Properties: Corn contains antioxidants like lutein and zeaxanthin, which are beneficial for eye health.
  3. Vitamins and Minerals: Corn is a good source of essential vitamins and minerals, including vitamin B, folate, and magnesium, which support overall health and well-being.
  4. Energy Boost: The carbohydrates in corn provide a quick and sustained energy source, making it a great snack for maintaining energy levels throughout the day.
