Asham, also known as parched corn, is a traditional Jamaican snack that holds a special place in the hearts of many. This simple yet flavorful treat is made from ground roasted corn and sometimes peanuts, creating a delicious, nutritious, and long-lasting snack. Its preparation is deeply rooted in Jamaican culture, often enjoyed by both children and adults.
Despite Asham dwindling in popularity as a snack it is still being made in the rural community of Maggoty, St. Elizabeth by Aunty Cena who Wellesley had the great opportunity to chat with. Aunty Cena took us through the entire process of making parched corn Asham. Here is the recipe she uses.
Step 1 - Prepare the Corn:
- Shell the corn kernels and remove any damaged ones.
- Wash the corn thoroughly, then sun dry until completely dried.
Step 2 - Roast the Corn:
- Heat a Dutch pot or heavy-bottomed skillet over medium heat.
- Add the dried corn kernels to the pot and stir continuously.
- Roast the corn for about 20 minutes, or until the kernels turn brown. Be careful not to burn them.
Roast the Peanuts (if using):
- In the same pot, after removing the corn, roast the raw peanuts until they are golden brown. This step is optional but adds a delightful nutty flavour to the mix.
Step 4 - Grind the Corn (and Peanuts):
- If you have a mill, grind the roasted corn and peanuts into a powder.
- Traditionally, a mortar and pestle are used. Add the roasted corn (and peanuts if using) to the mortar and beat it until it is finely ground to a powder. This process requires significant time and effort.
Step 5 - Add Sugar:
- Gradually add granulated sugar to the mortar while grinding the corn. Adjust the amount of sugar to taste.
Step 6 - Sieve the Powder:
- Use a strainer or fine sieve to sift the ground corn and remove the larger pieces.
- The resulting powder should be smooth and consistent.
Step 7 - Store or Serve:
- Package the asham in airtight containers for long-term storage.
- Asham can be enjoyed as is, providing a crunchy and sweet snack.
