If you live in Jamaica or have visited before, I know that you know our patties, especially beef and cheese, are our go-to snacks when on the road. However, many of us, including myself, have become more health-conscious and figuring out our intolerances, allergies and more. Discovering that you are gluten intolerant is certainly a shocker and may have you thinking that you can no longer enjoy any of your favourite foods.

While you certainly can’t go to any of our favourite patty shops here in Jamaica and order a gluten-free patty, it doesn’t mean your patty-eating days are over. You just have to make it yourself. Consider this your sign, because I will tell you exactly how to do this.

Now I am no genius, I was totally lost at first as to how to make a gluten-free patty, but after scouring the internet and discovering a few recipes I liked, I decided to take the best part of each recipe and make it into my own. Now, fair warning, Do not expect this to taste just like our regular patties, but they are tasty and they will definitely curb that patty craving.

Gluten Free Jamaican Beef Patty Recipe

INGREDIENTS

    For the Pastry Dough:
    - 2 cups gluten-free all-purpose flour (such as oat flour or breadfruit flour)
    - 1 teaspoon xanthan gum (if not included in the flour mix)
    - 1 teaspoon salt
    - 1 teaspoon curry powder
    - 1/2 teaspoon turmeric powder
    - 1/2 cup cold unsalted butter, cubed
    - 1/2 cup ice-cold water

    For the Filling:
    - 1 tablespoon vegetable oil
    - 1 small onion, finely chopped
    - 1 cup cooked and diced chicken (or use your favourite protein or meat substitute)
    - 2 tablespoons Maggi all purpose seasoning
    - 1 teaspoon curry powder
    - 1/2 teaspoon thyme
    - Salt and pepper, to taste
    - 1/4 cup gluten-free chicken or vegetable broth

PROCEDURE

For the Gluten-Free Pastry Dough:

1. In a large mixing bowl, whisk together the gluten-free flour, xanthan gum (if using), salt, curry powder, and turmeric powder.

2. Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.

3. Gradually add the ice-cold water, a little at a time, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes to firm up.

For the Filling:

1. In a skillet, heat the vegetable oil over medium heat. Add the curry powder and allow it to burn until it become dark brown.

2. Stir in the cooked chicken (or protein of your choice). Add all purpose seasoning, onion, thyme, salt, and pepper. Cook, stirring, for another 2-3 minutes.

4. Pour in the gluten-free chicken or vegetable broth and let the mixture simmer until most of the liquid has evaporated. Remove from heat and stir in the chopped cilantro or parsley. Allow the filling to cool slightly.

Assembling the Patties:

1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. Divide the chilled dough into equal portions and roll each portion into a thin circle (about 1/8 inch thick) on a lightly floured surface.

3. Spoon a generous amount of the filling onto one half of each circle, leaving some space around the edges. Carefully fold the other half of the dough over the filling to create a half-moon shape.

4. Use a fork to crimp the edges of the patties, sealing them tightly. Place the patties on the prepared baking sheet.

5. Bake the patties in the preheated oven for 25-30 minutes or until they are golden brown and crispy.

6. Remove the patties from the oven and let them cool slightly before serving. Enjoy your homemade Gluten-Free Jamaican Patties with your favourite dipping sauce or chutney!
