Mr. Atkinson has shared a great deal with us already, but he has been so generous as to show us how he makes his own sweetener from sugar cane. He fascinated us with his Jamaican Chocolate Tea, with a healthy twist. In it he used sugar cane juice instead of processed sugar and it was just as, if not more delicious than it was before.

Mr. Atkinson shared his way of making Jamaican chocolate tea with all natural ingredients including coconut milk and sugar cane juice!
Many of us just purchase sugar at the supermarket. However, in recent years many people have begun to move away from using processed sweeteners to healthier alternatives.
Mr Atkinson has been using cane sugar as his sweetener for years. He says he never purchases processed sugar for his home and he only has processed sugar if he is offered something he didn’t make and he might accept it. But outside of that, it’s cane juice from his farm.
How does he do this? You might be wondering. If you are familiar with sugar cane, you know how tough it can actually be. Well, he uses the manual old-fashioned method of a table top sugar mill. This mill itself has quite a history. Mr. Atkinson’s father had a factory in Kingston and there was a man who sold at the gate. The man ended up selling Mr. Atkinson's father the cane mill all those years ago, from when he was a little boy. That's the mill he still uses today.
This process is not a long one but it can be quite tedious.
The juice will run down the funnel and into the container.
Using his age old sugar mill, Mr. Atkinson makes sugar cane juice, his natural sweetner!
Mr. Atkinson adds a little ginger to his, just to add a little flavour. He made us try his Apple juice which, again, was delicious. Don’t worry I’ll share this recipe with you too!
Alternatively, you can pour over ice and serve.
Cane juice is a natural and healthy alternative to processed sugar. It is also a great replacement as it adds sweetness without detracting from the flavour of the main ingredient. Not only that, it can be added to basically anything.
If you can’t make it yourself, you might be able to find it being produced commercially. However you are able to get your hands on a sugar cane machine and you are up to the challenge, you could make freshly made sugar cane juice at your every whim.
The next time you are in Jamaica, remember to ask the fruits man for a cup of his as well.
