While our cuisine pulls from a blend of African, European, Asian, and Caribbean influences, at the core, we stick to a few key ingredients and rotate them through different cooking methods. If you’re new to Jamaican food, planning a visit to the island, or curious about trying your hand at Jamaican cooking, I’ll walk you through the basics so you’ll know exactly what to expect and I'll even link some must-try simple but delicious recipes for you to try.

While we have a lot of different dishes, the foundation is pretty straightforward, and that’s part of what makes it so special. We mostly stick to a few protein choices, typically chicken, fish, pork, beef, and sometimes goat or oxtail. You know the basic stuff, nothing too crazy. But you see the magic comes from how we cook and season them.

Meats and Proteins: The Main Attraction

When it comes to proteins, we stick to the basics that I mentioned above and switch up the cooking styles. Some of the common ways we prepare our meats are:

  • Fried: A crispy, golden treat, especially for chicken and fish.
  • Jerked: Marinated in spices and cooked over pimento wood for that signature smoky flavour.
  • Curried: Coated in vibrant curry spices and slow-cooked until tender, like curried goat or chicken.
  • Brown Stewed: Simmered in a thick, savoury sauce with onions, peppers, and thyme.
  • Baked or Roasted: For a lighter but still flavorful option, especially with pork or fish.

Starches for Sides: Rice and “Hard Food”

Most of our dishes are served with rice—it’s a staple, especially if you are grabbing lunch or dinner at a restaurant. We usually pair it with:

  • Rice and Peas: Made with coconut milk, kidney beans (red peas as we call them), and herbs for a flavorful side.
  • Plain White Rice: Simple but perfect for soaking up all the delicious sauces.
  • Pumpkin Rice or Callaloo Rice: Variations that add some extra veggies to the mix.

But rice isn’t the only option. We also love pairing our meals with what we call “hard food”—a variety of boiled provisions that make the dish extra filling and mostly had at breakfast or homemade dinners. Some of the ones you’ll see most often are:

  • Boiled Yam
  • Green Bananas
  • Dasheen
  • Pumpkin
  • Corn

These boiled foods add a hearty touch to our meals and are perfect for soaking up stews and sauces.

Vegetables and Greens: Keeping it Fresh

No dish is truly complete without a side of veggies, right? So we like to keep things fresh and healthy by adding vegetables to complement our meals. Some of the common ones you’ll find in our dishes are:

  • Callaloo: A leafy green that’s often sautéed with onions, garlic, and peppers.
  • Pumpkin: Boiled or added to soups.
  • Cabbage: Steamed with carrots and other seasonings for a light, healthy side.

Seasonings: The Soul of Our Cooking

Now the key to our Jamaican dishes comes down to our seasoning. Here we keep things as natural and organic as possible when it comes to flavour. We rely heavily on fresh herbs and spices to bring our dishes to life. Here are some essentials we use every day:

  • Thyme: A must-have in stews, soups, and marinades.
  • Pimento (Allspice): This spice gives jerk seasoning its unique kick.
  • Garlic, Ginger, and Onions: These are the base for most of our dishes.
  • Scotch Bonnet Peppers: If you like heat, you’ll love these fiery little peppers, I sure do.
  • Coconut Milk: We use it to add richness to rice and peas, soups, and curries.

Our cuisine may use simple ingredients, but when prepared with care, it is anything but ordinary. Whether it’s a plate of curried chicken with white rice or some fried fish with boiled yam, our meals are made to nourish and satisfy. If you ever find yourself on our island or just in your kitchen trying to recreate these flavours you’ll quickly see that it’s not just about the food. It’s about the joy, the warmth, and the love we put into every dish.
