But one thing is for sure, Hominy Corn Porridge would be on the list. What is Hominy Corn Porridge?

Jamaican Hominy Corn Porridge is a hearty and nutritious breakfast dish made from hominy corn. The resulting porridge is smooth, creamy, and often flavoured with cinnamon, nutmeg, vanilla, and coconut milk, creating a symphony of flavours that will delight your senses.

The Difference Between Corn and Hominy Corn

So I know you must be wondering, is there a difference between corn and hominy corn? And the answer is yes. We are all familiar with corn, also known as maize, which is a staple crop worldwide. Hominy is derived from field corn, sometimes referred to as yellow or white maize. Slaked lime or lye is used as an alkali solution to soak dried hominy kernels. The hull and germ are removed from the corn in a process known as nixtamalization, which facilitates grinding and cooking. In addition to facilitating the release of more nutrients from the kernels, nixtamalization also facilitates digestion and increases the amount of niacin (often referred to as vitamin B3).

What are the health benefits of hominy corn?

Hominy corn offers several health benefits:

  1. Rich in Fiber: Hominy corn is a good source of dietary fibre, promoting digestive health and aiding in regular bowel movements.
  2. Nutrient-Rich: It is packed with essential nutrients like vitamins B3 and B6, potassium, and phosphorus, contributing to overall health and well-being.
  3. Improved Amino Acid Profile: The nixtamalization process enhances the availability of amino acids in hominy corn, making it a valuable source of protein.
  4. Boosts Energy: The carbohydrates in hominy corn provide a sustainable source of energy, keeping you fueled throughout the day.
  5. Vitamin B: For new red blood cells to develop, vitamin B is crucial. In addition, it gives the body quick energy.

Hominy Corn Porridge Recipe

INGREDIENTS

  • 1 cup hominy corn
  • 4 cups water
  • 1 cinnamon stick
  • 3-4 cups coconut milk
  • 1/2 cup condensed milk or sweetened condensed coconut milk
  • Cornstarch or flour for thickening
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Pinch of salt

PROCEDURE

1. Prepare the Hominy Corn:

   - Rinse the hominy corn thoroughly under cold water.

   - In a large pot, combine the hominy corn, water, and cinnamon stick.

   - Bring to a boil, then reduce the heat and let it simmer for 1-1.5 hours or until the corn is tender. Drain any excess water.

2. Cook the Porridge:

   - Add the coconut milk, condensed milk, ground cinnamon, ground nutmeg, vanilla extract, and a pinch of salt to the cooked hominy corn. 

   - Stir well and let the mixture simmer over low heat for another 15-20 minutes, stirring frequently until the porridge thickens to your desired consistency. During this time, as you monitor the thickness of the porridge, you can mix a small amount of flour or cornstarch in some water and add gradually to the pot, until you achieve the consistency you prefer. 

3. Serve Warm:

   - Remove the cinnamon stick before serving.

   - Pour the hominy corn porridge into bowls.

   - Garnish with a sprinkle of ground cinnamon or nutmeg if desired.

   - Enjoy the warm, comforting Jamaican Hominy Corn Porridge!
