Do Jamaicans Eat Pork?  It’s a valid question, especially with the strong Rastafarian influence in Jamaican culture. But let me tell you, plenty of us do enjoy pork, and one of our go-to ways of preparing it is brown stew pork. Honestly, brown stew is our go-to for most proteins, it’s just that good. So today, I’m sharing my recipe with you.

I won’t claim to make the best brown stew pork, but I will say that my recipe is pretty tasty, and it took me some time to perfect it. Sometimes, even the smallest ingredients and simplest steps can make a world of difference in how your dish turns out.

For instance, keeping a kettle of boiling water on standby is key, you never want to add cold water to your pork once you’ve started cooking. Also, you can call me old school, but I absolutely must add vegetable oil to my pot before adding the pork. And don’t even get me started on burning your sugar, using plain store-bought browning just doesn’t compare. That extra step will take your dish from a 5 to at least an 8!

Ingredients like green bell peppers, scotch bonnet peppers, thyme, and pimento seeds are essential. And if you don’t have them on hand, I’d recommend putting off cooking the pork until you can get them. Trust me, it’s worth it.

But enough talking; let’s dive into the recipe!

Easy Jamaican Brown Stew Pork Recipe

Ingredients

  • 2 lb pork
  • Handful of pimento seeds
  • 1 large onion
  • 2 stalks of scallion
  • 3 sprigs of thyme
  • 1 large green bell pepper
  • 4 cloves of garlic
  • 1 scotch bonnet pepper
  • 1 tsp Maggi All Purpose Seasoning
  • 1 tsp Easi Spice Pork Seasoning
  • 1-2 knobs of ginger
  • 2 tbsp brown sugar
  • Vegetable oil
  • Fresh Jamaican French thyme (or oregano)
  • 1 tbsp browning
  • 1 tbsp ginger soy sauce

Instructions

  1. Clean the pork with a generous mixture of vinegar, water, and lime juice, then cut it into small pieces.

  2. Add all your seasonings and spices, then cover with cling wrap and set aside to marinate. I prefer marinating overnight, but at least an hour works too.

  3. Heat your pot (I prefer using a Dutch pot) and add vegetable oil. Once the oil heats up, add 1 tbsp of brown sugar. Allow the sugar to burn - not until it’s black, but until it spreads, turns dark brown, and forms bubbles. Depending on the heat of your stove, this should take about a minute.

  4. Add the marinated pork to the pot, but make sure to brush off any herbs stuck to the pieces of meat - you’ll need to add those back later. Stir the pork, ensuring that all the pieces are well-coated in the sugar. Then cover and leave to cook.

  5. As the pork cooks, it will start to release its own juices, so you won’t need to add any liquid just yet. This is a good time to set your kettle to boil.

  6. After about 10 minutes, the liquid in the pot will evaporate, leaving just the oil. The pork will start sizzling (but not burning). Stir the pork, then add enough hot water to cover the meat and allow it to cook.

  7. You may need to repeat adding hot water a few times until the pork becomes soft and tender, with the meat easily pulling away from the bone.

  8. Once the pork is tender, add the seasonings you set aside from marinating. Turn the heat to low and let the pork fully absorb all the flavours from the herbs and spices.

  9. After a few minutes, add the remaining tablespoon of sugar. Taste the sauce and add salt or additional spices if necessary.

  10. Let the dish simmer for another 15 minutes, or until the gravy becomes nice and saucy (but not too thick).

And there you have it, Jamaican Brown Stew Pork! I love this dish with rice and peas and Jamaican coleslaw, but it pairs well with just about any side dish you can think of.
