Jamaican Egg Cups Delight Recipe || Jamaican Recipe Contest Entry #11

Ingredients



  • 8 eggs
  • 2 medium tomatoes diced
  • 1 small onion diced
  • 1/2 sweet pepper diced
  • 1/2 cup ham bites
  • 2oz cows milk
  • 1/4 cup lettuce finely chopped
  • 1tbsp back pepper
  • 1/4 tsp salt
  • 2 slices of tastee cheese


Method



  1. Set aside two containers one for whisking the egg and one for testing each egg after cracking it.
  2. Whisk all eight (8) eggs until fluffy.
  3. Add milk to egg mixture and whisk until milk is fully blended.
  4. Add black pepper an salt and whisk to evenly distribute.
  5. Grease muffin pan with canola spray oil.
  6. Spoon out egg mixture into six (6) cup muffin pan evenly mid way in each.
  7. Add chopped tomatoes, onion, sweet pepper, ham bites and chopped lettuce evenly to each cup in the muffin pan.
  8. Add taste cheese on top of each muffin cup.
  9. Add muffin pan to pre-heated oven and bake at 375° F for 15 minutes.
  10. Serve warm or hot.


I was inspired to share this recipe because it is a fun and creative way of preparing eggs for the children and adults as well.

This recipe is unique as the ingredients can be tweaked to your liking.

Instead of ham bites sausages could be used. Also as the ingredients can be found in every household and is not expensive to make and is easy to prepare, no mess to contend with for cleaning up.

It is also a fun way of getting the kids to eat their eggs. I felt a burst of excitement preparing this treat as I was on the outside while it was in the oven and the aroma that filled the air outside was tantalizing to my taste-buds. I got requests from family and friend for seconds.

Colorful dish, good source of protein and very easy to prepare.

This is an new and excited way to prepare egg which a child would like to assist in the preparation process.

The fillings are also very nutritious, hence this single items could be deemed a balance meal

That looks so delicious which I could get a bite,a fantastic recipe like that must have been in the family for decades,I can bet it was handed down to you by your mom who taught you to cook that well.
