Jamaican Chicken Salad in Pineapple Shell || Jamaican Recipe Contest Entry #2
Who doesn't like a good chicken salad, hence the reason I choose this meal to share with you all.
Pineapples are known for being the icing on the cake, when there is no Cake.
We all use it as means of decorations to help set the tone for a party table, just add a few lollipops and we are good to go.
So why not use it for events such as Christmas Dinner or good old family get together on a Sunday evening. It is easy, and affordable too. All you need are the following:
INGREDIENTS
2 Small pineapples cut in halves lengthwise
1.5 Cups Cooked chicken (boiled, fried or baked)
4 Hard-boiled eggs (diced)
1/2 cup Raisins
1/4. Mayonnaise
METHOD
1. Take the 2 small pineapples that have been cut lengthwise and cut the flesh away from shells and set aside.
2. Cut chicken flesh in cubes.
3. Place pineapple flesh in a bowl with the chicken cubes, diced hard-boiled eggs and raisins.
4. Add mayonnaise and the Toss (mixed together).
5. Place mixture in pineapple shells, leave in the refrigerator for a few minutes,
6. Serve chilled.
7. Serves 4.
